Nesting is the specification that matters
A flip-top that nests stores in a fraction of the wall space of one that merely folds. If you are buying ten or more, that difference decides whether they live in a cupboard or against a corridor wall forever.
Check the castors too. Tables that get moved weekly on lockable castors last; tables dragged on fixed feet do not.
Layouts
Rectangular tops give you the most layout options: rows, U-shapes, boardroom, clusters. Trapezoid tops look flexible and in practice only work in the arrangement they were designed for.
